May is quite a special month celebrating two very important occasions.  First is giving tribute to our mothers and all the mothers in the whole world, second is the mother of the country- Her Majesty Queen Victoria

Although most people might have believed that Hallmark gave birth to the celebration of Mother’s Day, history says otherwise. Centuries ago, back to the time of the ancient Greeks, they held festivities to honor Rhea, the mother of many deities,  while Christians celebrated the Mother’s festival on the fourth Sunday of Lent to honour Mary, the mother of Christ. Eventually, the religious order stretched the holiday to include all mothers, and named it as the Mothering Sunday.

In the US, a century and a half ago, Anna Jarvis, an Appalachian homemaker, organized a day to raise awareness of poor health conditions in her community. She called it “Mother’s Work Day.” In 1905 when Anna Jarvis died, her daughter, also named Anna, began a campaign to memorialize the life work of her mother. Anna began to lobby prominent personalities such as John Wannamaker, Presidents Taft and Roosevelt, to support her campaign to create a special day to honor mothers. Five years later, the House of Representatives adopted a resolution calling for officials of the federal government to wear white carnations on Mother’s Day. In 1914 Anna’s hard work paid off when Woodrow Wilson signed a bill recognizing Mother’s Day as a national holiday. At first, people observed Mother’s Day by attending church, writing letters to their mothers, and eventually, by sending cards, presents, and flowers. Mother’s Day has flourished in the United States and all over the planet since children everywhere take advantage of this day to honour and express appreciation of their mothers

Victoria Day, or May long weekend marks the end of winter and the start of spring or summer season.  After this weekend, gardeners can be reasonably sure that there will be no more frost, allowing them to sowing their crops and garden plants.  People start their summer vacation plans  after the long  cold months of winter.

Victoria Day, a national holiday marked by the monarch’s birthday, has been celebrated in Canada even before the beginning of her reign. Queen Victoria was born on May 24, 1819. She is the longest-reigning monarch of the United Kingdom. During Victoria’s life, the British Empire expanded considerably, creating a Commonwealth that includes Canada. After her death in 1901, May 25 became known as Empire Day. The sovereign’s official birthday was still celebrated, often on the King’s or Queen’s actual birthday.

Thus, our array of gastronomic menu items this month has been compiled especially    to pay tribute to the most important woman in our lives, our  dearest mothers and to please her royal highness’ taste buds The Queen.  Here are the Queen’s most favorite brunch with a Filipino twist.

TASTEBUDS

Pear Pomegranate and Citrus Punch

Breakfast Sausage Patties                           (Hamonado Longganisa Skinless)

Ingredients:
  • 1 cup of pomegranate juice
  • 2 cups of sparkling pear juice
  • Juice of  a freshly squeezed orange
  • 2 Tablespoons sugar (optional)
  • Ice cubes
  • Orange slices for garnishing
  • 2 Tablespoons honey, for dipping
  • 3 Tablespoons sugar for dipping
  • 1 teaspoon salt, for dipping
  • Decorative toothpick

Procedure:

  1. In a pitcher, mix pomegranate and  sparkling pear  juice
  2. Squeeze 1 orange with pulp and add to the mixture.
  3. Add  ice and  sugar if desired. Mix thoroughly.
  4. Pour honey in a container and dip rim of the glass.
  5. Mix sugar and salt in another container and dip the glass with honey.
  6. Pour juice in glasses
  7. Garnish with Orange Slices

Yield: 2 Glasses

Ingredients:
  • 1 kilo ground pork
  • 1/4 kilo pork fat (ground)
  • 1/2 cup brown  sugar
  • 3 cloves of garlic, minced
  • 1Tablespoon  Worcestershire Sauce
  • 1 1/2 teaspoon. fine salt
  • 1 teaspoon  pepper
  • 12 pieces parchment paper  cut 4”x4”
  • 2 Tablespoons  canola oil

Procedure:

  1. In a small bowl, mix ground pork and fat.
  2. Add brown sugar, garlic and Worcestershire sauce.
  3. Mix well then add salt and pepper.
  4. Refrigerate  overnight
  5. Scoop 2 tablespoons and  form into balls.
  6. Press into patty.
  7. In a skillet, heat oil and fry sausage for  2 minutes on each side.
  8. Pat dry with paper towel before serving

Yield: 12 pieces

Creamy French Toast with Marmalade Sauce

Cappuccino Au Creme

Ingredients:

Toast:

  • 6 Texas slices white bread
  • 2 Eggs
  • ¼ cup 2% milk
  • Pinch of cinnamon powder
  • 3 teaspoons soft margarine
  • 3 teaspoons whipped toppings

Marmalade Sauce:

3 Tablespoons orange marmalade

2 Tablespoons Maple Syrup

Filling:

6 teaspoons of softened light cream cheese

Procedure:

  1. In a medium size skillet, heat the margarine.
  2. In a medium bowl, whip eggs and milk.
  3. Add cinnamon powder.
  4. Dip both sides of bread slices  and  place in the skillet..
  5. Cook each side until golden brown.
  6. Set aside
  7. In a small pan, boil maple syrup and marmalade.
  8. Make a sandwich by spreading 1 teaspoon of softened  cream cheese  on each side of the toast then press firmly.
  9. Spoon the whipped topping  on top of the sandwich.
  10. Pour marmalade sauce on top.
  11. Serve while hot.

Yield: 3 servings

Ingredients:
  • 2 Tablespoons freshly ground coffee beans
  • 3 Tablespoons cocoa powder
  • 3 cups 2% milk
  • 2 teaspoons sugar (optional)
  • Pinch of powdered nutmeg
  • 2 teaspoons whipped topping

Procedure:

  1. In a small pan, boil ½ cup of water and drop ground coffee wrapped in filter paper. Lower the heat.
  2. Add milk and simmer for 2 minutes
  3. Add cocoa and simmer for another minute.
  4. Add sugar if desired
  5. Pour in a cup and drop a teaspoon of whipped topping.
  6. Sprinkle with nutmeg.
  7. Serve Hot

Yield: 3 Cups
