The All-Filipino Knight of Columbus Council of Calgary spearheaded a fundraising campaign last January 4 at the newly opened Aristocrat Restaurant on 17th Avenue SE. This was for the benefit of the recent Typhoon Pablo that hit once again the mid Visayan and Mindanao region of our Country. Led by its Grand Knight Hardy Del Castillo, the member Knights and their families gathered to have a night of GOTO… a Filipino rice congee cooked and flavoured with a variety of meat but mostly of ox tripe. Garnished with fried garlic, a touch of lemon or calamansi, partnered with a little bit of fish sauce (patis), voila!!!! A dish so filling and is good to the last spoon. Beyond the tasteful Goto is the fact that the proceeds, whether big or small will benefit the Filipinos mostly affected by the December smash of Typhoon Pablo that left Compostella Valley and New Bataan without electricity, ruined barangays, and derailed families. It is a simple yet heartwarming night to know that many are willing to pay more for the price of a simple rice porridge, knowing that with each bowl, comes the offering of love and compassion to those mostly affected. The Philippines may not be spared from the many typhoons that comes and goes the island, but the spirit of “Bayanihan” will always live in each and every Filipinos heart living here in Calgary.
